Egg Potato Curry

I got this yummy,mind blowing recipe from the famous culinary author Mrs.K.M Mathew. Yesterday while I was searching for an egg recipe over the internet, I got stuck in this creamy egg curry with potatoes. The best part came in my mind is that there is no need to cut that much of onion as of a normal egg roast. 
Actually is it an egg curry with potatoes or a potato curry with eggs??????

Ingredients :

  1. Eggs : 3
  2. Potatoes(cubed into small pieces ): 2 or 3 small
  3. Onion(chopped) : 1
  4. Ginger(sliced) : 1 tsp
  5. Garlic (sliced) 1 tsp
  6. Green Chillies(slitted) : 2
  7. Red Chilly Powder : 4/3 tsp
  8. Coriander Powder : 1.5 tsp
  9. Turmeric Powder : 1/4 tsp
  10. Pepper powder : 1/4 tsp
  11. Cardamom pods(Elakka) : 2
  12. Cinnamon : 2 small pieces
  13. Cloves : 1
  14. Thin Coconut Milk : 3/4 cup
  15. Thick coconut milk : 1/4 cup
  16. Vinegar : 1/2 tsp
  17. Salt
  18. Coconut Oil 
For tempering :: 


  1. Coconut Oil: 1/2 tsp
  2. Ghee : 1/2 tsp
  3. Mustard seeds : 1/2 tsp
  4. Pearl Onions : 3-4(chopped)
  5. Curry Leaves : 1-2 springs


Method :

  • Hard boil the eggs and keep aside.
  • Grind the ingredients from 8-14 into a smooth paste.
  • Mix vinegar and salt with the thin coconut milk.
  • Heat oil in a pan and saute onions,ginger,garlic and green chillies till the onions become transluscent.
  • Add the masala paste and saute for 1-2 minutes.
  • Now add the thin coconut milk and bring to boil 
  • Add the cubed potato pieces , cover and cook in medium flame.
  • When the gravy reduces,and the potatoes are cooked well add the thick coconut milk and bring to a slight boil.
  • Now add the boiled eggs,combine well with the masala and switch off the flame
  • Heat oil and ghee in another pan and splutter mustard seeds.
  • Add the chopped pearl onions and curry leaves and fry well
  • Pour it into the curry and close it till serving.

Egg Puffs

Here I'm serving the delicious,flaky puffs,those are very easy to make and yummy as well......



Ingredients :

  1. Puff pastry sheets(square) : 4
  2. Eggs : 2
  3. Onion : 2 small/ 1 big
  4. Curry leaves : 4-5 leaves 
  5. Chicken Masala(I use eastern ) : 1.5 tsp
  6. Turmeric Powder : 1/4 tsp
  7. Pepper powder : 1/4 tsp
  8. Salt
  9. Oil





Method :
  • Boil the eggs and cut them into halves.
  • Heat oil in a pan ,saute the sliced onion well.
  • Add the curry leaves and saute well.
  • Add all the powders,salt and saute till the raw smell goes.
  • Switch off the flame.
  • Fill the puff pastry sheet with an egg topped with the masala and fold into the desired shapes.
  • Brush them with the beaten egg white.
  • Arrange them in the baking tray greased with little oil.
  • Bake it for 15-20 minutes until the top part becomes golden brown

Egg Masala

This was my mom's usual curry on most of our breakfasts, especially with appam,pathiri or idiyappam ....We,children  liked this curry very much because of its less spice level and more gravy in it..When I was a school going girl, with any bread or rice I always wanted more gravy ,that is above the level of the main dish in the plate. So my mom had no other choice, grind coconut with most of the curries made at home..This egg masala is also one among them and I like it so much.


Ingredients :
  1. Eggs : 3
  2. Onion : 1 
  3. Ginger Garlic paste : 1.5 tsp
  4. Green Chilly : 2
  5. Curry Leaves : 2 springs
  6. Red Chilly Powder : 1.5 tsp
  7. Coriander powder : 1 tsp
  8. Turmeric Powder : 1/2 tsp
  9. Garam Masala : 1/2 tsp
  10. Coconut : 1/2 cup
  11. Mustard Seeds : 3/4 tsp
  12. Fennel Seeds : 3/4 tsp
  13. Coconut Oil 
  14. Salt



Method :
  • Hard boil the eggs ,remove the shells and keep it aside.
  • Grind the coconut into very smooth paste.
  • Heat oil in a pan and splutter mustard seeds and Fennel Seeds.
  • After spluttering them,add sliced onions,slitted green chillies and curry leaves.
  • Saute well till the onions get transluscent.
  • Add ginger garlic paste and saute again.
  • Add all the powder, salt and saute again till the raw smell goes.
  • Now add the ground coconut with some water and the eggs.
  • Slightly boil the gravy for 4-5 minutes in medium flame.
  • Sprinkle little garam masala on top and garnish with coriander leaves
  • Switch off the flame and close the lid for some time.

Egg Kabab


A simple and easy to make tea time snack / starter

Ingredients :

  1. Eggs(Hard Boiled) : 2(Cut lengthwise into 4 pieces)
  2. Onion : 2 small
  3. Ginger Garlic paste : 1 tsp
  4. Curry Leaves(Minced) : 1 spring
  5. Turmeric Powder : 1/4 tsp
  6. Meat Masala (I use Eastern) : 1 tsp
  7. pepper Powder : 1/2 tsp
  8. Salt
  9. Oil
  10. Coriander leaves : 2-3 leaves
  11. Maida : 1/4 Cup
  12. Bread Crumbs : 2 breads



Method :
For Masala Covering :

  • Heat oil in a pan
  • Saute onion chopped, Ginger Garlic paste and Curry Leaves
  • Add all the powders, salt and saute till the raw smell goes.
  • Remove the yolk from each egg and mix it with the masala




  • Cover eggs with the masala well
  • Make maida batter(medium thick) by applying little water,a pinch pepper powder and salt
  • Dip each covered egg in the maida batter and roll it in the bread crumbs



  • Deep fry them in medium flame.

Kerala Egg Roast


Boiled Eggs cooked in a spicy masala .This Kerala special dish is usually served with Appam and Idiyappam. I make this atleast once in a week.

Here's the recipe:


Ingredients :


  1. Hard Boiled Eggs : 3
  2. Onions : 2 large/3 small
  3. Ginger Garlic Paste : 1/2 tsp
  4. Tomato : 1/2 of a big one/ 1 small
  5. Green Chillies : 2-3
  6. Curry Leaves : 2-3 springs
  7. Red Chilly Powder : 1 tsp
  8. Turmeric Powder : 1/4 tsp
  9. Fennel Powder : 3/4 tsp
  10. Salt : As required
  11. Coconut Oil


Method :

  • Heat oil in a pan
  • Saute Onions, Green Chillies and Curry leaves together.
  • When the onions are sauted well, add ginger garlic paste and saute again(2-3 minutes)
  • Now add tomato and stir again until the tomato is completely mixed with the masala.
  • Add all the powders ,salt and saute again(low flame)
  • Mix the masala with 1/4 cup of water and put the eggs in it.
  • Boil the curry (high flame)till it thickens and the eggs are coated well with the gravy.
  • Finally put some curry leaves and a pinch of fennel powder on top of the curry and close the pan.

Egg Curry with Coconut Milk


One of the Classic Curries of Kerala and has a divine combination with Kerala Breakfasts like Appam, Idiyappam etc........

Ingredients :

  1. Eggs (Hard Boiled) : 3
  2. Onion (Slit Lengthwise)-2-3
  3. Green Chilly - 3
  4. Ginger - 1tsp(crushed)
  5. Garlic - 1 tsp (Crushed)
  6. Curry Leaves - 2-3 springs
  7. Coriander Powder - half tsp
  8. Turmeric Powder - half tsp
  9. Pepper Powder - 1 tsp
  10. Garam Masala - half tsp
  11. Coconut Milk (Thin) - 3/4 cup
  12. Thick Coconut Milk - 1/4 cup
  13. Coconut Oil - 1.5 tbsp
  14. Salt



Method: 

  • Heat Coconut Oil in a pan and add onions,Curry leaves and green chilly.
  • When the onions get transparent, add ginger and garlic
  • Saute for 2-3 minutes till the raw smell goes
  • After that add the masala powders except pepper and garam masala and salt.
  • When the raw smell goes add the thin coconut milk and hard boiled eggs.
  • Cook for 4-5 minutes until the gravy thickens and coat well with tha eggs.
  • Finally add the thick coconut milk and garam masala and wait for few seconds (Do not boil)
  • Switch off the flame and cover.
