Here's a delicious stirfry using eggplant and it's a great side dish for our lunch.
Ingredients :
- Eggplant/Vazhuthananga/Kathrikka(slice into medium thick pieces ) : 1 Cup
- Onion(sliced) : 2
- Chilly Powder : 1 tsp
- Turmeric Powder : 1/4 tsp
- Mustard Seeds : 1/2 tsp
- Curry Leaves : 2 springs
- Salt
- Oil

Method :
- Heat oil in wide pan and splutter mustard seeds.
- Add curry leaves and onion sliced,saute for 4-5 minutes
- Add chilly powder,turmeric powder ,salt and saute till the raw smell goes.
- Now add the cleaned,drained eggplant pieces and mix well.
- Cover and cook in medium flame for five minutes.
- Open the lid,cook uncovered by stirring frequently for another 5 minutes.
- Switch off the flame..
Ready!!!!!Serve!!!!!!!!Enjoy!!!!!!!!
