One of our favourite side dishes for breakfast as well as dinner .This thick curry is made with ground coconut and some usual spices ..
It is very easy to make and tastes awesome.
Ingredients :
Hard boiled eggs : 5
Onion : 1 or 2 sliced
Green Chilly : 2 slitted
Curry leaves : 1 spring
Ginger Garlic Paste : 1/2 tsp
Red Chilly powder : 3/4 tsp
Coriander powder : 3/4 - 1 tsp
Turmeric powder : 1/2 tsp
Fennel Powder : 1/2 tsp
Grated Coconut : 4-5 tbsp
Mustard Seeds : 1/4 tsp
Salt
Coconut oil
Method :
Grind coconut into a fine paste and keep aside.
Heat oil in a pan and splutter mustard seeds.
Saute sliced onion,green chillies and curry leaves together . No need to get brownish, just a glassy appearance)
Add the powders one by one and salt
Saute till the raw smell goes..
Add the coconut paste and boiled eggs.
Allow for a slight boil.
Switch off the flame.
Ready...Serve...enjoy...
