Guest Post - Kothu Chicken

This is my first guest post added by my dear friend Shamna..Thank you Shamna for such a nice recipe...
Ingredients :
  1. Chicken cut into thin slices : 1 Cup
  2. Chilly Powder : 1.5 tsp
  3. Turmeric Powder : 1/2 tsp
  4. Salt
  5. Lime Juice : 1/2 tsp
  6. Onion : 1 big (Chopped)
  7. Crushed Ginger Garlic : 1 tsp
  8. Curry Leaves : 2 springs
  9. Dry Red Chillies : 2
  10. Coconut Flakes : 2 tbsp
  11. Cardamom : 1
  12. Cloves : 2
  13. Cinnamon : a small pieces
  14. Fennel Seeds : 1/2 tsp
  15. Cumin Seeds : 1/2 tsp
  16. Pepper Powder : 1 tsp
  17. Coconut Oil


Method :
  • Marinate the chicken pieces with half of the chilly powder, turmeric powder, salt , lemon juice and keep aside.
  • Heat Coconut Oil in a pan.
  • Add Onion sliced, crushed  ginger garlic and saute well
  • When the onions become transparent add Curry leaves, Red Chillies splitted, Whole Spices and saute again
  • Add the remaining red chilly powder,pepper powder and turmeric powder.
  • When the raw smell goes add the marinated chicken pieces.
  • Cook in low heat(no need of water)
  • When the chicken is cooked well and mix with the spices add the fried coconut flakes and mix well.
  • Switch off the flame..


Ready!!!!!!!Serve!!!!!!!!!!!!
